)They said they had many a night where they'd jot down song/duet ideas. Before this performance, they decided to 'finish' one of them to perform this night

There are probably a lot of tunes that are a result of what Mark talked about -- and, unfortunately, we may not hear of those beginnings. What makes it unfortunate is that it's often very interesting and an integral part of what makes up the song.
